CHRISTMAS BUG

I have just decided that Christmas has a different smell (*a nice one) and there is something different about the month December. Not about the food and the fact that its one of the most talked about days. It’s just the consciousness of who we celebrate on Christmas day – Jesus. It is his birthday and a lot of cooking will be going on…Plenty killing that day tho. R.I.P to all the chickens, goats, rams that are going down! Please one-minute silence for all the chickens (*still don’t understand why we do that)

I recently picked a new hobby of trying out new types of food or trying the old ones but doing it in a different way. So my mother’s birthday was celebrated on the fourth of November and I decided to give her a treat by cooking her fried rice but I needed to make the fried rice differently from the way we did it so that my effort will be super appreciated. Yes! I set out with the daunting task to be different that day. So I am sharing the method I learned here since it is a jolly season and a lot of cooking will be going on. Photography was done by me! You heard right! Yummy cake, need to start baking cakes too.

I wasn’t running on a very high budget so I skipped something’s that I could. Here are the orishirishi (different things) that you will need;

  1. Rice *you can’t be going to the farm and forget your hoe. Just in case you have forgotten you need rice to make fried rice.
  2. Chicken
  3. Thyme
  4. Curry
  5. Maggi
  6. Salt
  7. Liver
  8. Cabbage
  9. Carrot
  10. Green peas
  11. Onions
  12. Canned corn
  13. Green pepper
  14. Ata Rodo

STEP ONE

Steam the chicken – Ensure that you add a little water as the chicken generates its own water when you start steaming. If you feel the quality added initially is inadequate add a little more and check the spice to ensure it hasn’t lost its taste. I like to call my chicken “curry chicken”  :-).

STEP TWO

Steam the rice – per boil the rice and add a little meat water when the water added is about to dry. I also learned this new method recently.

STEP THREE

Chop – Chop the Liver, carrot, green pepper, ata rodo and every other ingredient you deem necessary. Chopping is an enjoyable process if you are very fast. Makes you feel like a professional chef. Mix all the ingredients together. I told you I decided to do my fried rice differently this time around so I added all the necessary seasoning and placed it in the fridge to get cold.

STEP FOUR

Fry – Fry the chicken or use whatever method you deem fit. It is a matter of choice. Also, fry the ingredients that have been removed from the fridge. start adding the parboiled rice in small quantity until the ingredients have been added and mixed properly.
